Simple cake recipes are great to have on standby. Especially over the long weekend when you need a sweet pick-me up for friends or family. This one is easy and satisfying.
- Step 1Preheat the oven to 180°C. In a bowl, mix the eggs and sugar until pale yellow and light. Grease a 23cm cake tin with butter and line the base and sides with baking paper.
- Step 2To your eggs and sugar, add the melted butter and milk and stir to combine. In a separate bowl, whisk the flour, baking powder and salt and then stir those into the wet ingredients, folding to combine.
- Step 3Pour the batter into your prepared cake tin. Top with the rhubarb, pressing it down gently. Sprinkle with the extra sugar. Bake for 35-40 minutes or until a skewer knife comes out clean. Top with icing sugar or a little extra caster sugar, and serve with cream or crème fraîche if you like.
- 150g melted butter, plus extra for greasing
- 1 tbsp milk
- 180g caster sugar, plus 2-3 tbsp for the topping
- 3 large eggs
- 250g plain flour
- 1 tsp baking powder
- 200g young rhubarb, cut into roughly 2cm batons
