Sweet, savoury, and effortlessly elegant – this fig and goat’s cheese sourdough toast is the perfect balance of flavours for a light lunch or simple supper. Caramelised figs, tangy balsamic shallots, creamy goat’s cheese, and peppery rocket all come together to create a dish that feels indulgent yet refreshingly simple. Ready in just a few steps, it’s a recipe that proves that things-on-toast can make for a special lunch.

Ingredients
  • Step 1Drizzle the bread with a little olive oil on both sides and place in a frying pan over a medium heat. Toast on both sides and remove from the pan.
  • Step 2Mix the figs with a little olive oil, pepper and half the thyme. Place in the pan cut side down. When they are caramelised turn them over. Cook for another minute or so and remove from the pan.
  • Step 3Add the sliced shallots to the pan with a touch more oil and the remaining thyme. Allow to gently colour and soften over a medium heat. Stir in the honey and vinegar. Allow the sauce to thicken gently and turn off the heat.
  • Step 4Spread the goat’s cheese onto the toast and top with the shallots, rocket and caramelised figs.
