Courgetti with Roasted Tomato, Caper, Feta & Parsley Sauce

The Spiro Green Handheld Spiralizer is one of my favourite kitchen gadgets. I most often use it to spiralize courgettes I add them to every pasta dish I make! This one has the most delicious sauce of juicy roasted tomatoes, capers, melted feta cheese and generous amounts of parsley. This is fast and fuss-free food, perfect for evening meals when time is of the essence – just double, triple, or quadruple the sauce quantity depending on how many you’re feeding. Its also gorgeous spread on toast topped with some cooked chicken or served with avocado and soft-boiled eggs for a healthy brunch.

Method⁠:

  1. Preheat the oven to 200ºC/180ºC fan/gas 6.
  2. Place the cherry tomatoes, feta cheese, capers, garlic, and olive oil in a medium roasting dish.
  3. Season with salt and pepper and roast in the oven for 15 minutes, or until the tomatoes are bursting open and the feta is bubbling.
  4. Remove from the oven and mash together to create a sauce. Add the parsley, set aside and keep warm. 
  5. Bring a large pot of salted water to the boil and cook the tagliatelle according to packet instructions.
  6. Add the spiralized courgettes for the last 2 minutes of cooking.
  7. Drain and reserve 3 tablespoons of the cooking water. 
  8. Return the pasta and courgettes to the pan and pour the sauce all over, along with the reserved cooking liquid.
  9. Toss gently until thoroughly combined and serve topped with olives (if using).

 

Tip:

The sauce can easily be made in an air fryer if you use the right-sized dish.

300g cherry tomatoes

80g feta cheese, crumbled

2 tbsp capers plus 2 tbsp of their brine

2 garlic cloves, peeled and crushed

4 tbsp olive oil

35g parsley, stalks removed and finely chopped

2 courgettes, spiralised

70g dried tagliatelle

4-5 pitted olives, roughly chopped (optional)
