Soft, cinnamon-dusted slices are fried to perfection, then crowned with a glossy, tangy-sweet cherry compote. A dollop of creamy Greek yoghurt, a sprinkle of toasted almonds, and a dusting of icing sugar take this to pure indulgence territory. It’s a luxurious start to the day, and just the thing to impress guests on a slow winter morning.
- Step 1To make the compote, tip cherries into a saucepan with the sugar and cornflour and toss to coat. Cover and cook gently for 5-10 minutes, then stir in the orange zest and juice.
- Step 2In a shallow dish, beat the eggs, maple syrup, milk, vanilla extract, cinnamon and sea salt with a small whisk.
- Step 3Dip the slices of bread into the egg mix and allow them to steep for a minute or two on each side, until well-coated.
- Step 4Heat the butter in frying pan over a medium heat, and fry for 2 minutes on each side, until golden.
- Step 5Cut in half and serve the French toast topped with yoghurt, compote, flaked almonds and icing sugar.
- For the compote:
- 400g fresh, tinned or jarred cherries
- 1 orange, zest and juice
- 1 tbsp cornflour
- 50g caster sugar
- For the French toast:
- 4-6 slices bread (brioche or challah are good here)
- 3 medium eggs
- 2 tbsp maple syrup
- 75ml milk
- ½ tsp vanilla extract
- 1tsp ground cinnamon
- 30g unsalted butter
- To serve:
- Greek yoghurt
- Toasted flaked almonds
- Fresh mint
- Icing sugar
